From your post we have no way of knowing what country you are in or if you are in the US, what part? So how can anyone help find a home for your poor cat? If you go on www.petfinder.com you should be able to locate a local rescue organization that can help you rehome her if you are in the US. It was very irresponsible to get a pet you had no intention of keeping. Cats are not "throw-aways" that you get for your own entertainment and then toss when you move.

Why can't you take your cat? I lived in Singapore for 3 years and when I returned to New York, I took all 3 of my cats with me that I adopted in Singapore... why can't you take the cat with you? I couldn't have even imagined leaving my 3 cats behind, it never even crossed my mind, I even had to sell alot of my furniture so I could have more money to bring my cats with me because there was no other option in my mind. Have you not bonded with this cat?

I'm not sure ehere you are or where you have to travel to but its pretty easy to organise travel with a pet if you use a specialist company. I brought my 2 cats over from England with me when I moved to the US and used AirPets International and they made sure all the paperwork/vet checks etc were done.
If the issue is that you are moving to your parents who don't like cats or an appartment that doesn't allow cats I think you should try to convince them or find a new apartment.
If you can't take her with you try to find a breed rescue group to help you as they usually have a good network and can screen adopters. If you search for Persian Rescue you should be able to find a group that can help you.
